More Than a Pastry. A Story.
At Pyshburg, we don't just serve food — we share a feeling. A bite of warmth, a sip of memory, and a cozy pause in your day.
What Makes Us Special
A Taste That Tells a Story
In the heart of Helsinki, Pyshburg brings together old traditions and modern moments. Our signature Psh-ka — a golden, crispy ring of dough — is more than just a snack. It's a reminder of simpler times, passed from kitchen to kitchen, generation to generation.
Born in the grey streets of Leningrad, perfected by grandmothers, shared with neighbors — and now lovingly made fresh in Finland.

Rooted in History, Made for Today
We believe in honest food:
no fuss
no fake nostalgia
just flour, warmth, and care
Every Psh-ka is shaped by hand, fried to a perfect crisp, and served with our house Glögi — a spiced, warming drink for cold northern days.
No two Psh-kas are the same. That's the beauty of it.

From the North, For Everyone
Whether you grew up with Pyshka or just discovered it on a walk through Helsinki, Pyshburg welcomes you. Locals, travelers, digital nomads, artists, families — we all need something that feels like home.
That's what we serve:
comfort in every bite,
warmth in every cup,
and a story you take with you.

Our Mission
To keep one small tradition alive — and make it meaningful again.
Because in a world of fast everything, something slow, soft, and simple still matters.

From Dockside Griddle to City Favorite
Pyshburg began in the summer of 2020 — not in a café, but on wheels. Armed with a griddle, a tiny trailer, and a lot of hope, we rolled from one dock to another, serving hot Psh-kas by the water. Sometimes at metro exits. Sometimes in parking lots. Always with a smile — and always fresh.
In early 2021, we opened our first indoor space on Annankatu, a tiny corner where the scent of fried dough filled the air and regulars filled the stools.
By October 2021, we had outgrown that little nest and moved to Iso Roobertinkatu. That's where Pyshburg truly came to life — through winters, holidays, queues at the door, laughter in the kitchen. We stayed there for almost four years, until June 2025.
This isn't just a business to us. It's a journey. And every street we stood on, every batch we made, every guest we welcomed — it's all part of the story we still carry forward today.
